Oatmeal Jam Bars

We love sweets in this house! I mean, LOVE sweets! These jam bars are the perfect fix for a sweet tooth!

 

1 1/2 Cup All Purpose Flour

1 1/4 Cup Old Fashioned Rolled Oats

1/2 Cup Chopped Nuts

1/3 Cup Packed Light Brown Sugar

1/4 teaspoon Baking Soda

1/4 teaspoon Salt

1 teaspoon Cinnamon

2 Tablespoons Chia Seeds

12 Tablespoons room temperature Butter

6-8oz Jam of your choice

 

Sift your flour, baking soda, salt, and cinnamon into the bowl of an electric mixer. Add the oatmeal, nuts (I prefer toasted slivered almonds), brown sugar, and chia seeds. Mix this for a minute or two to combine.

Add in your room temperature butter and mix till crumbly.

Place a layer of parchment paper down on either a two-piece tart pan or small sheet pan. This is not required but makes them easier to remove from the pan. Press 2/3 of the crumbs into the bottom of your chosen pan. Set the remaining 1/3 aside for later.

Bake at 350° for about 20 minutes or until it’s starting to brown around the edges. Once browned, remove the pan from the oven and spread the jam out on the top of the crust and sprinkle the remaining oatmeal mixture on top in crumbles. Return the pan to the oven for an additional 20-30 minutes till the top crumbles have started to brown.

Remove from oven and allow to cool before cutting.
